I would also be interested in this feature! It's pretty common on most POS systems targeted at services but have yet to find this on any Shopify POS compatible app.

To book for free is an incentive for the cutomer to connect. no obligation. If the cancel within 24hrs to then charges a fee puts responsibility on them to be aware and ready 24 hrs in advance...ie confirm their appointment. a penalty for late cancellation is only fair. booking for free.

While we dont support this directly, we think using Deposits is a good way to get to the same state. You can charge a customer a deposit ($25) for booking, and then refund the deposit if they arrive, or keep it if they cancel.
